Flour tortillas that are a bit thicker and a lot tastier than store bought. Great for tacos, fajitas, burritos, etc.

Directions

Make the dough 1. In a large bowl, whisk together 300g all-purpose flour, 7g (1 tsp) salt, and 2g (1/2 tsp) baking powder. 2. Slowly pour in the 175ml (3/4 c) warm water while mixing constantly. Continue mixing until it comes together into a ball of dough. 3. Turn the dough out onto an unfloured surface and knead for 3-4 minutes, until smooth 4. Cover with a damp towel (or paper towel) and let rest at room temperature for 30 minutes Cook the tortillas 1. Divide the dough into even pieces, depending on how large you want the tortillas to be. For burrito-size, divide into 6 pieces. Tacos would be 12 pieces, and fajitas would be 18. 2. Roll each piece of dough into a ball 3. On a floured surface, roll each ball into a circle of the appropriate diameter. 4. Heat a skillet over medium-high heat until hot (drops of water should "dance" before quickly evaporating). 5. Cook one tortilla at a time, for 20-40 seconds per side, until lightly charred. 6. Remove from heat and repeat to cook the rest.
