Prep: 1. Melt butter in the microwave Cook: 1. In a large bowl, mix together AP Flour (3 c), Baking Powder (7 tsp), Salt (1/2 tsp), and Sugar (2 tbsp). 2. Make a well in the center and pour in the Milk (2 1/2 c), Eggs (2), and Melted Butter (6 tbsp). I recommend cracking the eggs into a separate small bowl and pouring from there, so you don't risk getting eggshells in your batter which would be difficult to find and remove. 3. Mix until combined, taking care not to overmix. A few small lumps are fine. 4. Heat a lightly-oiled griddle or frying pan over medium-high heat. To test temperature, flick some water onto the cooking surface - you'll know it's ready when they beat up and dance around, evaporating quickly. 5. Scoop the batter onto the griddle in 1/4 c portions and brown on both sides (about 1-2 minutes per side). 6. Serve hot with syrup and additional butter (or peanut butter, if you're a psychopath) to taste.
