1. Head a griddle or large frying pan over medium heat. 2. In a small bowl, combine Cinnamon (2 tsp), Nutmeg (1/2 tsp), and Sugar (4 tbsp). 3. In a shallow container, such as a pie pan, pour the Vanilla (1 tsp), and then pour the Cinnamon (2 tsp) and Nutmeg (1/2 tsp) on top of the vanilla and mix together. 4. Add the Eggs (8) to the cinnamon mixture and whisk together. The order of these is important to help the cinnamon dissolve so you don't have big clumps of it. 5. Pour the Milk (1/2 c) into the egg mixture and whisk until combined. 6. Melt some of the butter on the griddle. 7. One at a time, dip the slices of bread into the egg mixture (coat both sides) and then place on the griddle. Fry until golden brown (1-2 minutes) then flip and cook the other side. 8. Serve hot with syrup.
